Pareto red wine has been produced since 1985 with Cabernet Sauvignon grapes grown in the township of Greve in Chianti. It is one of the great Tuscan red wines produced with international vine varieties, the result of that movement of experimentation and innovation linked to the so-called "Supertuscan". Cabernet sauvignon is the French grape variety at the base of many great Bordeaux wines, but in Bordeaux it is always blended with Merlot and other grapes, while the milder climate of Tuscany allows it to be vinified in purity. Cabernet Sauvignon is the most famous black berried grape in the world, it gives powerful and complex wines, capable of long aging and above all of great appeal. Cabernet is easily understood, everyone likes it. Pareto is also the name of the vineyard from which the grapes come: a vineyard between 300 and 370 meters above sea level facing south-west with clayey soil rich in skeleton, one of the most valuable of the Nozzole estate. Here Cabernet Sauvignon is cultivated with spurred cordon with a planting density of 5000 plants per hectare.
Alcoholic fermentation takes place in stainless steel vats with maceration on the skins for 15-20 days. Pumping over and délastage are carried out to keep the skins wet and facilitate the extraction of color and tannins. After racking, the wine undergoes malolactic fermentation in steel and only subsequently is decanted into French oak barriques of which one third are new. The wine ages in barrique for about 18 months.
