Fiano Beneventano IGP from Cantina del Taburno is a white wine produced in the Campania region of southern Italy. The 100% Fiano grapes come from hillside vineyards located between 200 and 600 metres above sea level. Fiano grapes are harvested by hand, generally in the second half of September, when they have reached perfect ripeness. The bunches are gently pressed to extract the must, separating it from the stalks. The must obtained is left to macerate for a short period in contact with the skins to extract aromas and fragrances. It is then gently pressed to separate the must flower from the marc. The must is transferred to temperature-controlled stainless steel tanks, where alcoholic fermentation takes place thanks to the action of indigenous yeasts. The wine is aged for a few months in stainless steel tanks to enhance its organoleptic characteristics, then filtered and bottled, ready to be enjoyed.
