Dom Pérignon Rosé was first produced in 1959 and represents an ambitious research for structure based on the Pinot Noir of the Montagne de Reims. The details of the composition of the cuvée are a secret of the maison and every time it is decided to produce it, it is designed according to the characteristics of the vintage. It is in fact produced only in the most favorable years, to always be a product of absolute excellence. In the maison's philosophy, Dom Pérignon Rosé is a daring wine, a challenge of creativity, which intends to enhance the energy of the Pinot Noir that occurs in this cuvée both as white winemaking and rosé winemaking.
The 2008 vintage generally produced very classic and balanced Champagnes. The season started with cool and damp weather conditions, but August was dry and the warm days of September allowed for healthy and ripe grapes to be harvested.
Pinot Noir is vinified partly in white and partly with a short maceration on the skins. All the fermentations of the base wines are carried out in stainless steel. After the creation of the cuvée, the Champagne ages on the lees for 119 months. The dosage is low (5 g / l).
