Catarratto 2023
It is an excellent typically Sicilian wine, carefully interpreted by Curatolo Arini in a contemporary way. The lively and savory taste makes it perfect for pairing with seafood and more. The white grape variety Catarratto is widely cultivated in Sicily, especially in the provinces of Palermo, Trapani and Agrigento. It is the shoulder of many traditional Sicilian white wines thanks to its richness in both organic acids and phenols. The grapes come from the Chirchiaro vineyard in the hinterland of Marsala in the province of Trapani at 500 meters above sea level. The proximity of the sea favors a climate favorable to the optimal ripening of the grapes.
The grapes are left to macerate for a few hours at low temperature before fermentation. They are then gently pressed and the free-run must ferments in stainless steel vats at a controlled temperature. At the end it remains in contact with the lees for 50 days.
