Quintessential Chardonnay sparkling wine: creamy, fruity, refreshing.
Chardonnay grapes fro this blanc de blancs are grown on soils of calcareous white marl in the southern hills of the Langhe, those with higher altitudes, where the cooler climate does not allow the cultivation of black berried grapes. It is a clone of Chardonnay coming directly from Burgundy and is interpreted by Cocchi in such a way as to enhance the most peculiar characteristics of the variety: softness, creaminess, elegance.
The yields are very low. Only the purest free-run must is extracted from a delicate pressing. It ferments in steel vats at a low temperature to obtain a base wine that rests on the lees for a few months. The second fermentation is then carried out in the bottle according to the traditional method with the addition of selected yeasts. The sparkling wine ages in the bottle for 4 years before disgorgement and the dosage is very low.
