The word Gewürztraminer, which in French denominations is written "Gewurztraminer" without the umlaut, comes from the German suffix "Gewürz", or "spiced". In fact, it is the most aromatic grape variety of all, with intense and penetrating aromas of spices, flowers and tropical fruit. In Alsace it is considered a noble grape and gives rise to traditional white wines, often with residual sugar. They are off-dry or half-sweet wines with a strong flavor, enjoyable at meals with savory cheeses or spicy dishes. Willm's Alsace Gewurztraminer wine comes from the lower Rhine area in Alsace, where the soil is clayey and calcareous and the climate is mild as the area is bordered to the west by the Vosges mountain range which holds back the cooler and wetter currents. The vineyards are sunny and allow the grapes to ripen perfectly.
A slow pressing serves to extract the juice from the grapes which is left to clear up by natural cold settling. Then the must ferments in stainless steel vats at a controlled temperature (18 ° C). The wine ages in steel on its lees for 2-3 months. After being filtered and stabilized, it rests in steel vats for about 8 months before being bottled.
