Spumante Brut Pinot Nero Bottega Miabi
Miabi is a refined sparkling wine obtained from Pinot Noir through the long Charmat method. It has an elegant, mouth-filling and intense taste with a refreshing finish. It was conceived with the idea of balance and harmony that are typical of Japanese culture in mind. The bottle itself is a tribute to a Japanese form of art, called "dyed obi". The Pinot Noir grapes come from an area very suitable for this vine, namely the Oltrepò Pavese hills in Lombardy. The soils are clayey and calcareous and the climate is mild with excellent thermal excursions, which favor the development of flavor compounds. All the production phases are treated with care and with the aim of obtaining a high-quality product.
The grapes are brought to the cellar and processed immediately after harvesting. A light pressing of the whole bunches extracts the pure liquid must which after clarification is fermented without skins in steel vats at a controlled temperature to obtain the base wine. Selected yeasts and sugars are added to this still white wine for the second fermentation which takes place in an autoclave according to the tank method. The sparkling wine ages in autoclave for 3 months during which the fine lees are kept in suspension to enrich the taste.
