The Greco del Beneventano from Cantina del Taburno is a dry white wine made from Greco grapes. It has a straw yellow colour and an intense and fruity bouquet, with notes of citrus, exotic fruit and white flowers. On the palate it is fresh and mineral, with good acidity and a long persistence. Harvesting is done manually, generally at the end of September, when the grapes have reached perfect ripeness. This makes it possible to select the best bunches and to preserve their integrity. The grapes are gently crushed and destemmed to separate the berries from the stalks. This process is essential to avoid extracting bitter tannins from the stalks, which could compromise the quality of the wine. The resulting must undergoes a soft pressing to extract the juice from the grapes gently, without damaging the skins. This helps to preserve the freshness and aromas of the wine. The must is transferred to stainless steel tanks, where alcoholic fermentation takes place at a controlled temperature of 15°C. This process transforms sugars into alcohol and produces carbon dioxide. The use of stainless steel tanks favours the preservation of the wine's primary aromas. After fermentation, the wine is matured for a short period in stainless steel tanks. This period of ageing allows the wine to stabilise and develop greater aromatic complexity.
