Amineo Coda di Volpe is a wine that can be enjoyed both young and after several years of bottle ageing.
Amineo Coda di Volpe from the Cantina del Taburno is a white wine produced in the Campania region of southern Italy. The 100% Coda di Volpe grapes come from hillside vineyards located between 200 and 600 metres above sea level. The Coda di Volpe grapes are harvested by hand, generally in the second half of September, when they have reached perfect ripeness, the bunches are gently pressed to extract the must, separating it from the stalks. The must obtained is left to macerate for a short period in contact with the skins, to extract aromas and fragrances. It is then softly pressed to separate the must flower from the marc and is then transferred to temperature-controlled stainless steel tanks, where alcoholic fermentation takes place thanks to the action of indigenous yeasts.the wine is aged for a few months in stainless steel tanks, to enhance its organoleptic characteristics, then it is filtered and bottled, ready to be tasted.
