Primitivo is an ancient variety cultivated in Apulia whose grapes ripen very early compared to other varieties. A very interesting peculiarity of Primitivo is that only 20 days after harvesting, this vine is able to give a discrete second production: The Primitivo grapes are harvested by hand in the last ten days of August, in small 5 kg crates to preserve their integrity. Manual harvesting allows careful selection of the best bunches. The bunches are gently pressed to extract the must, separating the grapes from the stalks. The must obtained macerates in contact with the skins for a variable period of time, usually several days. This phase allows the extraction of colour, tannins and aromas from the skins, giving the wine its structure and complexity.The must is fermented in temperature-controlled stainless steel tanks. During fermentation, the yeasts transform the sugars into alcohol, producing carbon dioxide and heat. The wine is matured in stainless steel tanks for a variable period of time. Ageing can also take place in wooden barrels, depending on the winemaker's choice. The wine is filtered and bottled. After a further period of ageing in the bottle.
